In today’s post I would like to share the best Christmas recipes

Pumpkin Spice Cupcakes

  • 1 ½ c. Flour

  • 1 ½ pumpkin pie spice

  • 1 tbs baking powder

  • 1 c. Pumpkkin pure

  • 1 tsp. Vanilla extract

  • 3/ granulated sugar

  • 2 eggs

  • 2 tbs coconut oil

  • Directions

Heat oven to 350 F.

In bowl, whisk flour, baking powder, pumpkin pie spice. In another bowl combine pumpkin and vanilla.

In large bowl, with mixer, beat coconut oil and sugar. Later add eggs then add flour and pumpkin mixture, mix until just combined.

Divide batter among muffin pan cups and bake for 25-30 minutes.

Christmas Short Bread

  • 250 g unsalted, softened butter

  • finely grated zest of 2 oranges and juice of 1

  • 125 g caster sugar

  • 250 g flour

  • 120 gr rice flour

  • 1 tbs ground mixed spice

Directions

Cream the sugar and butter in a bowl until fluffy. Stir in all the grated orange zest and the juice. Add both flours and the mixed spice. Mix togeher until the fough soft and smooth. Shape the dough and chill for 1 hour.

Heat the oven 170 C. After the dough chilled, roll it out on a floured surface and cut into any shape you want. Bake for 10-15 minutes.

Tahini Hot Chocolate

  • 1 ½ cups milk

  • 2-3 tbs honey

  • ½ vanilla extract

  • ½ cup tahini

  • Cinnamon

  • 7 ounces bitterweet chocolate, chopped

  • ½ teaspoon espresso powder

  • whipped cream and sesame seeds for topping

Directions

In a saucepan over low heat, whisk together tahini, milk, honey, espresso powder, vanilla extract and cinnamon. Heat until milk becomes very hot, then remove from heat and add in chopped bittersweet chocolate

Allow to sit for 5 minutes before whisking. The chocolate should be fully melted.

Top with sesame seeds and whipped cream and serve.

French Hot Chocolate

Ingredients

  • 2 cups milk

  • 1 tbs sugar

  • 10 oz dark chocolate

  • ½ heavy cream

  • Whipped cream

Add milk, heavy cream and shugar to a saucepan and heat until simmering.

Remove the head and add the chopped chocolate to the saucepan

Whisk until smooth

Serve with whipped crean and an extra chocolate.

Creamy Garlic Mashed Potatoes

  • 4 lb. Potatoes peeled and cut

  • 3 sprigs fresh rosemary

  • salt

  • pepper

  • 1 ½ c. Milk

  • 4 tbsp. Unsalted butter

  • 6 gloves garlic peeled and smashed

Directions

Tie rosemary sprigs together. Olace in pot along with potatoes and garlic. Add milk and cream and bring to boil. Att sald, reduce head and simmer until potatoes are very soft, 25 minutes maximum.

Remove from head, discard rosemary sprigs. Beat potatoes until smooth and add butter, pepper and stir to combine.

Roasted Pear, Onion and Sweet Potato

  • 2 Pears, cut into wedges

  • 6 sprigs thyme

  • 4 tbsp. Olive oil

  • salt

  • pepper

  • 2 red onions

  • 2 sweet potatoes, cut into half moons

Directions

Heat oven to 425. On baking sheet put pears, sweet potatoes, onions and thyme with olive oil and salt and pepper. Roast until golden brown, 40 minutes.

Roasted Olives with Garlic, Lemons and Herbs

Ingredients

  • Olive oil

  • Fresh thyme

  • Fresh rosemary

  • 1lb. Olives

  • ½ lemon cut into rounds

  • ¼ tsp. crushed red pepper

  • 1 clove garlic, peeled and crushed

Directions

Heat oven to 400 F. In baking dish mix and crush thyme, rosemary, olive oil and red pepper. Stir into lemon rounds and olives.

Roast about 20 minutes. Last 5 minutes stir in garlic.
